Ryota Igarashi was optioned to Triple-A Scranton/Wilkes-Barre on Monday.  From a New York Yankees' press release:

The New York Yankees today announced they have signed right-handed pitcher Derek Lowe to a Major League contract and selected him to the 25-man active roster. Lowe is scheduled to join the team tonight and is expected to pitch out of the bullpen.

... In a corresponding roster move, RHP Ryota Igarashi has been optioned to Triple-A Scranton/Wilkes-Barre. The Yankees’ 40-man roster now stands at 40 players.

Tsuyoshi Nishioka was optioned to Triple-A Rochester on Monday.  From a Minnesota Twins' press release:

To make room for Plouffe on the 25-man roster, the Twins have optioned infielder Tsuyoshi Nishioka to Triple-A Rochester. Nishioka, who was recalled on August 5, appeared in three games for the Twins.
